Why We Like Vicky’s Stuffed Chicken Breasts – Review
We think these are pretty good and overall one of the healthier options for a pre-made meal that’s both low carb, low calorie and pretty flavorful. Both my husband and I liked them, as well as our 8 year-old. 9 year-old picky eater ate around the filling which of course IMO is the best part…but he still ate the chicken, so win!
Costco members tend to love or hate these, and not much in the middle. I’m not sure why there is so much divide, but we do like them and recommend trying them. Please note though, these are organic chicken and sold by the pound….so are not cheap. The price of convenience!
Each serving has 4 net carbs and 200 calories and we think they are incredibly flavorful for a 200 calorie entree. They are fully cooked, just heat and serve, making them an easy keto, gluten free, weeknight dinner option.

It’s the worst meal I have ever gotten from Costco. Chicken was thin and dry; veggies were mush. No flavor. And I had 1 lb 13 oz of chicken but was charged for 2 lb 3 oz. Going to ask for refund tomorrow.

Love the Broccoli Cheddar Stuffed Chicken Breast, purchased at Costco. I went to replenish and they were no longer stocked at the two Costco’s near me. Anybody know another place to purchase these?
I havent bought the Vicky’s Stuffed chicken in awhile – I will look to see if my store still has them – you may be able to ask Costco to reorder it? So far as I know, Costco is the only store to carry Vicky’s – I know others have asked the same question before so I wish that other grocery stores would carry it! I’ll reply again after my next trip to Costco, if my store does still carry it, I think it’s definitely worth asking the manager to order it…
I love these stuffed chicken breasts. I started a diet in July & ate a half breast every day for dinner. It’s now Nov & I have lost 20lbs. They are easy to cook (follow directions), 30 minutes, juicy, full of broccoli, and easy to store after cooking. I am hypoglycemic & the protein in these chicken breast keep me full & not wanting to eat junk food. Now that I have achieved my desired weight, I would like to continue to have the chicken for dinner, BUT, Costco isn’t stocking them anymore, WHY ? I bought 4 boxes a week. Where can I buy these other than Costco ?
Oh shoot!! Yes, they can come and go at Costco. Right now I think they have a holiday version (but it’s not as low in carbs I don’t think)…hopefully the regular will be back soon. Real good foods makes a bacon wrapped stuffed chicken breast that’s also low carb – it’s frozen at Costco – and they make a similar version of the Vicky’s (which isn’t at Costco but at other retailers) and both are somewhat comparable in terms of low carb and flavorful stuffing. I’d suggest asking at your local Costco store if they can order more, or if there’s another store nearby that might stock them. Hopefully you get them back soon! I don’t know of another retailer for Vicky’s but if you find it please share it here, others who love it will be looking for that info too! Thanks!!
Cooking directions are wrong. Took more than one hour to cook. Not worth the time or money. Poor choice of COSTCO ago sell product

This item doesn’t change out for different variations – it’s a staple offering. During the Fall/Holiday season I’ve seen a cranberry stuffed chicken (if memory serves) but I’m not sure I’ve seen others? Anyone else?

I noticed they weren’t at my store for awhile but they are back now. Have you asked at customer service, I wonder if they might come back? These are definitely a popular item and they’ve been in stores a long time – I’ll be shocked if they are really discontinued?! But I’ve been shocked before, so 😉 Let me know if you spot them again! We bought Vicky’s Kitchen broccoli cheddar stuffed chicken breast on a Wim at Costco! We generally donot buy remade meals! However, it really looked good on the box, so we tried it. It was awful, the chicken was dry, the stuffing was tasteless and overall we were soooo sorry we bought it. We ate the one and threw the other one away. Makes us leary of buying premade meals again!
Honestly, I just made them and it was SO gross. The chicken was rubbery. The flavor was okay…. But I was charged $20!!! For 2 chicken breasts. Absolutely ridiculous.

Yes, we like them too. Realgood Foods also makes a stuffed chicken breast that’s bacon wrapped which we also like…it’s frozen though. Both are great, and low carb 🙂

so how long do you cook these for?
I purchased this from Costco 2 days ago and I made it tonight. It is disgusting. The broccoli cheddar filling is so incredibly gross. Let me qualify that with the fact that I enjoy broccoli and cheddar (especially together). I thought this would be tasty but it is nasty. I can’t believe anyone can eat this with a straight face. Yuck!
This is a buyer beware kind of item. One Box is $17.29 for CHICKEN! Ridiculous, never buying it again!
So glad we are not the only people who thought this is gross and disgusting. All of the ingredients sound wonderful however, it looked like a road kill wrapped around some mushy, watery, mess. The juice in the bottom of the pan looked like it had been regurgitated by someone or something. Not appealing at all. After dissecting it we came to the conclusion that it is just a chicken breast with “filling” and then a smaller piece of meat slapped on top and then “rolled”. When cooked, the “roll” just fell apart. All of the juice at the bottom just made the whole thing just gross.
Should these be thawed before putting in the iven?
These are sold refrigerated, not frozen…just FYI. I have never frozen them so I am not speaking from first hand experience, but if it were me, I’d defrost it before cooking.
Hi, would one package (i.e., the 2 stuffed breasts) feed 2 adults, at older and a 10 year old? I can’t tell how large they are and whether they’re split or large breasts.
I’d say that maybe 1/4 of the weight is filling so if 1.5 lbs of chicken would be enough for your family then 1 package would work. I make 1 box for our family of 4, 2 adults and a 7 and 8 year old…but my 8 year old is VERY picky so he probably eats about as much of it as a toddler, lol. And I make vegetable, salad and starch to go with it. If I were you, I would just get 1 package to try it, and just make your sides generous the first time? Also, just so you know, the breasts inside are individually wrapped so if you do find you would like more, in the future you can make 1.5 boxes you aren’t stuck making 2 and having way too much. Hope you like it!
Just tried vicky’s kitchen broccoli cheddar stuffed chicken breast from Costco. It was so delicious and tasty! Husband loved it too. I love that the ingredients are so clean and organic. I will definitely buy it again and recommend it too!
