Costco Stuffed Peppers – Review and Instructions
The Kirkland Signature Stuffed Peppers is one of the most popular prepared meals in the Costco Deli – and for a good reason. They are a complete meal, with seasoned ground beef and rice stuffed inside a fresh bell pepper…these have protein, rice and vegetable all in one colorful beef stuffed pepper. Simply bake them and dinner is done…you can even bake them right in the container they come in (well, remove the plastic cover).
Why We Like Them
Our review: These are super easy to make, and they come complete with a veggie, protein and starch all ready – just cover with aluminum foil and pop them in the oven, and dinner is done! You can make as many or as few of the stuffed bell peppers as you like. If you cook the whole tray, don’t worry because they heat up well so if you have leftovers, they make a great quick lunch just zap them in the microwave!
My 9 year old loves the the Kirkland stuffed bell peppers! My picky 10 year old doesn’t love them – but he doesn’t love anything so the fact that he’ll eat half of one is kind of a win if you know him. If your kids are picky, I’d say that if they will eat meatballs, sloppy joes or meatloaf, they will most likely eat these. If those are no-go, then these might not be the right dinner for them.

Costco Stuffed Peppers are super easy to make! The fresh bell peppers are stuffed with seasoned ground beef, rice and cheese and all you have to do is bake them in the oven for a meal complete with protein, whole grains and vegetables!
You'll find the Kirkland Stuffed Peppers in the prepared food section of the Costco Deli and they cost a little under $20 for 6 stuffed bell peppers. They do take a little while to cook so while they aren't "quick" there is zero prep and they are super easy to make. We recommend them for an easy weeknight meal option!
Ingredients
- 1 package of prepared Kirkland Signature stuffed bell peppers from Costco
Instructions
- Preheat oven to 400 degrees fahrenheit.
- Remove clear plastic lid and re-cover container with foil.
- Bake 50-60 minutes or until internal temp reaches 165 degrees.
Notes
Tip peppers to pour off excess water/juice from cooking and let rest 1 minutes before serving. If you like your stuffing to crisp up a bit, remove foil for last 15 minutes of cook time.
