Why Coconut?

Fruits are high in carbs, in general. But unlike your traditional high carb fruit, coconuts offer healthy fats. Additionally, they contain protein, several important minerals, and even a small amount of B vitamins. The minerals derived from coconut are important for numerous processes in the body. Coconuts are especially high in manganese, which is essential for bone health and multiple metabolic functions. Also rich in copper and iron, eating coconut can support the formation of red blood cells; and the selenium found in coconuts is an important antioxidant.
