Costco Garlic Rosemary Rack of Pork Instructions and Review

This year for Easter, Costco has a new version of the seasoned Rack of Pork, and itโs a Garlic Rosemary Rack of Pork available in the Costco deli prepared foods section.ย I went ahead and bought it early and made it last night so I could review it for you in advance of Easter because I thought some of you might be looking for reviews for it before your holiday dinner. And I also went ahead and put the cooking instructions into a recipe card for you below – I know that the cooking instruction label is super tricky to read and often gets thrown away. Garlic Rosemary Rack of Pork from Costco Fully Cooked
I cooked my rack of pork to above the recommended 145 – just a personal preference we like it a little more well done…so mine did take a little over the 18 minutes per pound. It hit 145 right about the 2 hour mark per the instructions. My roast was 6.85 lbs.
So yours won’t be as well done as mine if you stop at the 2 hours!
Our Family Review
We liked the new Garlic Rosemary Rack of Pork – it was a simpler rack of pork than the last seasoned rack of pork in that it wasnโt stuffed in any way – the one weโve seen around holidays for the last few years has been stuffed with onions. This might be a welcome change for some or a disappointment – but itโs a notable difference between the two. Our family liked both, but they were different.
We thought that it was a very large and substantial rack of pork, particularly for thirty five bucks. Of course, just like the previous iterations, it’s super easy to make and I literally just removed the plastic wrap, put it in the oven and that was it. For $35 it will be two meals for our family, and had eight huge Pork chops.
Servings in Each Package
I’m not sure how the official per pound serving recommendation goes, but if this is the main meat you’re planning to serve, and you are planning on serving each guest a whole pork chop then my guidance in terms of servings per package would be to just literally count how many bones stick out of the end and that is how many servings are in each package.ย
My 11 year old ate a whole one – he is a big eater when he likes something – but he’s still only 11 – and my 12 year old ate half of one (he’s super picky and that’s to be expected).
You could also carve the meat off the bone and then cut each chop into slices and serve alongside other meat options. Depends on your spreadโฆ
As far as serving kids, I think you could easily serve two kids or three toddlers even to one pork chop if you pre-cut it for them.ย But for adults I think I would personally just serve the whole pork chop on the bone. Easy peasy.

This oven ready seasoned rack of rack of pork from Costco is an easy and delicious member favorite for holiday meals.

Instructions
- Preheat oven to 350 F
- Remove plastic wrap and tray
- Bake for 18 minutes per pound or about 2 hours until internal temperature reaches 145 and allow to set for 15 minutes before serving
Helpful Cooking Time Calculations:
- 7 lbs = 126 minutes or 2 hours and 6 minutes
- 6.5 lbs = 117 minutes or 1 hour and 57 minutes
- 6 lbs = 108 minutes or 1 hour and 48 minutes
Notes
Plan on about 1.5-2 hours of cooking time for the Costco Garlic and Rosemary rack of pork, and as always we recommend calculating the cook time in advance so you can ensure your meal is ready when you need it! You can take this out 2 hours in advance and let it come to room temperature to shave a few minutes off your cook time if you're looking to expedite your cook time.
