These cooking instructions are for the boneless Kirkland Signature seasoned leg of lamb sold in the deli department. Kirkland Signature boneless leg of lamb is raw, fully seasoned and packaged in a disposable roasting pan. Each piece is about ~5lbs. You'll need to adjust your cooking time just slightly based on the size of the piece you purchased and your preferred doneness.

As a rule of thumb, each 5lb Leg of Lamb serves approximately 10 dinner guests.

These roasting instructions should work for most similarly sized raw, boneless legs of lamb - however you will want to season it yourself as the Costco leg of lamb in the deli is pre-seasoned and oven ready.

Instructions

  1. Preheat oven to 350 fahrenheit
  2. Remove plastic wrap and place entree container on the center rack of oven
  3. Roast for approximately 90 - 120 minutes or until internal temperature reaches 145 degrees fahrenheit (using an in-oven meat thermometer is recommended) for a medium roast.
  4. Let stand for 15 minutes before serving

Depending on your preferred levels of rare, medium rare, medium or well done, cooking times may range from 75 minutes to as much as 2 hours and 15 minutes.
