Roasting Times may vary as each piece is a slightly different size. Depending on your preferred levels of rare, medium rare, medium or well done, cooking times may range from 75 minutes to as much as 2 hours and 15 minutes. We recommend using an in-oven meat thermometer when cooking – especially for holiday meals – it takes away the need to pull it out and check it all the time which is one less thing to worry about when hosting a large party for special meal or holiday!

ProTip: For more even roasting, allow your boneless leg of lamb to come to room temperature before placing it in the oven to bake.
