Mini Carrot Cake at Costco
Costco Bakery fans are in for a sweet treat with the recent return of the Mini Carrot Cake at Costco. Costco’s beloved mini cakes (or supersized cupcakes) have been a major fan favorite and we see new mini cake flavors come to the Costco Bakery throughout the year. These seasonal carrot cakes at Costco are adorable and have cream cheese frosting and are topped with a festive orange carrot – perfect for Easter brunch or any Spring occasion.
The carrot cake flavored mini cakes from Costco are a seasonal item, and you can find them in-stores at Costco Warehouses from late February/early March through Easter. They are sold nationwide in the US. HAVE YOU HAD THEM? PLEASE LEAVE YOUR REVIEW IN THE COMMENTS BELOW!

My Review
The mini Costco carrot cakes are made with a classic carrot cake recipe including walnuts and raisins – personally I hate raisins in my cake (or cookies or anything for that matter) so while I love the flavor of the cake and the frosting – these aren’t a home run for me because of the raisins.
So that said, obviously if you like raisins, I think these are definitely worth a try!
From an ingredients perspective, I really wish the decorative frosting was made with better ingredients and there are a LOT of artificial colors in these. I don’t really understand why they are made with shortening. I guess it’s cheaper? I take one star off my rating for junky ingredients because personally I’d rather pay a buck more and just give my kids or guests food that’s made with [more] real ingredients.
That said, they cost WAY less than a comparable bakery cake or cupcake, and taste good (sans the raisins lol)…so these are still a recommended buy in my book (if you like raisins of course).

It’s been a few years since I’ve had the mini carrot cakes. I’ve always been crazy about them but I’m wondering if the recipe changed? They tasted a little bland and were dry.
