Winter means soup season, and there’s nothing cozier on a cold day than a warm homemade soup! Even better when it’s loaded with healthy stuff like fresh veggies and antioxidants. Ingredients
- 1 tablespoon of olive oil
- 1/3 of an onion
- 4 cloves of garlic
- 1 bunch of kale
- 1 carrot peeled and sliced
- Pinch of red pepper flakes (omit if you don’t like your soup spicy)
- 2 cans of cannellini beans
- 4 cups of chicken broth

Flexible Instructions
- sauté onion, garlic, carrots and kale in a tablespoon of olive oil
- add pepper flakes, salt and pepper and saute a few more minutes
- add chicken broth
- add white beans
- remove portion and purée
- add back and simmer
