Polenta with Roasted Vegetables

The Costco Deli just dropped a prepared Kirkland Signature Polenta with Roasted Vegetables – I bought one and dropped a quick review below as well as the calories, fat and other nutritional info, ingredients and cooking instructions (if you’re over 40 those panels are tiny, dang!). It is vegetarian – however it’s not vegan (has parmesan cheese, cream and butter). The short of the long is I liked it!
Availability Note: The polenta is a brand new prepared meal in the Costco Deli. It’s currently (as of November 2024) in refrigerated cases in the Costco Deli. New deli items are rotated regularly, and with the upcoming influx of mashed potatoes, sweet potatoes, and other Thanksgiving sides in the Costco deli, there’s a chance this is a short term item. It may also stay as a Thanksgiving side so I’m going to keep it under Thanksgiving sides for now…but I’d suggest grabbing one sooner rather than later if you’re hoping to try it as it may or may not be available for long. Let me know in the comments if you spot it go missing! Please!

I grabbed one of the new Polenta and Veggies from the Costco deli and we tried it. The short of the long that both my husband and I liked it, I will buy it again.
It’s been many years since I’ve made polenta, so truth be told we are definitely not a connoisseur of polenta. I’d love to hear from those who make it and eat it frequently what you thought? We totally enjoyed it!!
I probably would have preferred even less root veggies than there were, and just all traditional veggies – just because the polenta is already sort of a root vegetable – it just pairs better for me. There was a good mix though, and I liked it and we ate the whole package in 2 days! I’ll be getting another one on my next Costco run.
I’m hoping this sticks around through Thanksgiving – I think it would make a good Thanksgiving side dish!

Costco Polenta Cooking Instructions
- Preheat oven to 400 degrees F.
- Remove clear lid.
- Cover with foil.
- Place on a cookie sheet on center rack in oven.
- Bake for 45 minutes or until temperature reaches 165 degrees F.
