White Mini Cakes with Chocolate Buttercream
Costco Bakery drops a new flavor combination of mini cakes every few months – some fan favorites return and some new – but they’re always cooking up some delish baked goods! The bakery department just dropped white mini cakes with chocolate buttercream. My absolute most favorite cake combination is white cake with chocolate buttercream!!! The vanilla mini cakes with chocolate buttercream frosting come in a 6-pack of mini cakes. Some may call them gigantic cupcakes. Costco calls them mini cakes. Semantics I think.
Storage
These come shelf stable (room temperature) and do not require refrigeration. They do last longer if you refrigerate them, and many Costco members freeze them (I don’t love them frozen – but you can freeze them).

My Review
By and large, I don’t tend to buy the mini cakes because the “buttercream” is a vegetable oil/shortening based icing – it’s not butter. That’s why it’s not refrigerated, and in my opinion, it doesn’t taste as good and obviously it’s not as healthy. This also is why they’re so affordable.
I have to watch my fat and sugar intake, so I have to pick my battles on my sweets and while I do buy them sometimes – just generally speaking I’ll opt to eat real buttercream over these because it’s a treat for me and when I have it I want the real deal.
